Where is all the MSPI information? Where have I been for a good part of the last year?! These are both VERY good questions! Honestly, we’re still working through a host of food sensitives, allergies, and LIFE! I mean seriously, I have no real good answers as to where all the time has gone, but one things for sure, its time to get back to this little ‘ol blog of mine!

I’ve learned so much over the last year+, have so much to share, and can’t wait to start doing life with all of you again!

Oh my stars where has February gone, and WHY has it taken me until now to share my final thoughts on my #newyearnospend challenge?! Well there a whole lot of reasons, some very good and others ugh, well you get the point.

Those of you who followed along at the beginning of this adventure, know that I had SERIOUS reservations about this whole concept and if it would truly be something we could pull off for an entire month. Well I’m happy to report that for the most part we were able to do it…even so much so that we carried in a little bit into February as well!

You would think that this would be an easier task, as our week four #MotherhoodMonday topic is Motherhood Miracles. Here’s the thing, I think I might be having the most difficult time with this one. Seriously, what is wrong me? It should be SO easy to write about all the miraculous things that happen within us and all around us when we are mothers, but the reality is that so often it’s much easier to recognize our mistakes and all of the things that we should be doing differently then truly focusing on the miraculous blessing that it is to be a Mom.

This week is definitely no exception as we’re taking on Motherhood Mistakes…I’m pretty sure it doesn’t get more real than this!

Over and over we are told that being a mother is the most important job you’ll ever have, and without a doubt I believe this to be true. We are responsible for another human being and that my dear friends is far from easy…and let’s be honest, sometimes it’s downright scary. I almost opted out of participating this week, as I really wasn’t sure if I could do this topic justice, but I’ve been enjoying collaborating with these other lovely ladies so much, and sharing a bit more about my motherhood journey with all of you, that I decided to give it a whirl. So here we go, let’s talk about Motherhood Mindfulness.

Mindfulness: a mental state achieved by focusing one’s awareness on the present moment, while calmly acknowledging and accepting one’s feelings, thoughts, and bodily sensations

Let me just say right now that being present in the moment, and I mean the fully 110% all in kind of present, isn’t something that comes easily to me. I openly admit to being one of those mommas who’s mind is always going, who’s always looking ahead, and who isn’t always calm.

Pressure Cooker Coconut BBQ Chicken!

So ya’ll know that I was given the most amazing gift recent, an Instant Pot! Well I literally put this little beauty to work the very first night I got it, and look what I made in just 15 minutes…Coconut BBQ Chicken! It would have been done even faster if the meat I was using wasn’t partially frozen, incredible isn’t it?! If you’re want to try this one out for yourself here’s the recipe, and yes it’s MSPI friendly (dairy and soy free), plus gluten-free as well.

Pressure Cooker Coconut BBQ Chicken

  • 2 lbs. boneless, skinless chicken breast tenders (I used tenders because that’s what I had on hand)
  • 1 cup BBQ sauce
  • 1 cup coconut milk
  • 1.5-2 cups diced pineapple (I used fresh, but canned would work great too)
  • 1 tsp. chili powder
  • 3-4 drops of Lime Essential Oil
  • shredded coconut to garnish

Unexpected Blessings in the Form of an Instant Pot!

I can’t hardly believe that we are almost half-way through our #newyearnospend challenge, and I haven’t entirely lost my mind yet! I may have made two trips to the grocery store last week instead of just one…mainly because my little guy totally wasn’t having it the first try, but I still think I managed to stay pretty close to my original shopping list, it just happened to be divided into two trips instead of one.

I’m pretty proud to be able to say that for two full weeks there have been no impulse buys and no going out to eat! I’ve had to really curb my time spend on Slick Deals, as well as my favorite local buy, sell and trade Facebook Pages for the most part…just too much temptation. I learned pretty quickly that it’s just better to not even know about all the “good deals” I’ve been missing out on. 😉

It’s time for our second edition of #MotherhoodMonday and it’s a little bit heavier hitting than last week. We’re going to be sharing our Motherhood Misconceptions. I’ll be totally honest, I really struggled with this one. I had a pretty good idea of what I wanted to write about, but it would include sharing some personal details which I don’t usually talk about publicly, and haven’t remotely touched here on the blog yet. So much credit goes to the supportive group of ladies that I’m teaming up with each week, as they had nothing but kind encouraging words for me. After prayerful consideration I’d like to share with you a Motherhood Misconception that I’ve personally dealt with a lot ever since we announced our third pregnancy, and then the birth of this incredible little boy.

As many of you know, I’m so amazingly blessed to be the mother of a 15 year old, an 11 year old, and a newly turned 1 year old. I bet you have a good idea of where I’m headed already. Of course we received plenty of well wishes, love, and support when we started to share with others that we were expecting the newest addition to our family. We also got some of the “was this planned”, “oops”, and by perfect strangers “do all three have the same father.” It seems that when you have a sizable age gap between children that some people come up with all sorts of ideas and assumptions as to why that is.
